Our last few meals hadn’t been the best, so when we saw TACO FRESCO when exploring Downtown Rutland we decided to go back to our Airbnb, get freshened up and return for a nice dinner and a few of their specialist margaritas!
Taking seats at the bar (Monday July 29 2024), we ordered from the ‘especiale’ menu:

We chose to have tacos made from corn tortillas and the fillings, which were full of complementary and balanced flavors, were as follows:
๐ฎ Pollo (chicken) - jalapeรฑo, lettuce, salsa roja, shredded cheese
๐ฎ Barbacoa (slow cooked beef) - pickled onion, cotija cheese, corn, spicy ranch
๐ฎ Carnitas (pork) - pineapple, cilantro, cotija cheese, chipotle lime crema
We shared the food. Now, halving tacos isn’t easy and who’s to say which of us got the bigger halves?
Kathy, our server, was fab. She was fun and attentive even though she was run off her feet. She made us belly laugh when she thought I was from Texas! I had recently lost my voice so wasn’t sounding like my normal self. It was interesting to learn that we had a couple of things in common: she said she had previously worked in special education with students with challenging behaviours and had similar thoughts to me - that they are the best kids to work with. She was also due to visit Connecticut, just as we were.
To finish off our visit, we ordered a couple of cocktails and managed to get the last Strawberry Corona-rita - a frozen strawberry margarita made from El Jimador silver tequila, strawberry puree, house-made sour mix and triple sec, but with a theatrical flare whereby a bottle of Coronita Extra is flipped upside down into the cocktail glass. The drinks mix and you have to suck really quickly to stop it overflowing.
The Margarita Sandia was made with fresh watermelon puree and had a refreshing taste.
While we were enjoying our food and drinks, a storm swept through Rutland and we got a Flood Warning on our cell phones. A couple of hours later, we settled our check and left a good gratuity to reflect the brilliant service and vibrant atmosphere in Taco Fresco. Before we headed off, a local told us that the property used to be a “dive bar” but was renovated into Taco Fresco just over a year ago. The restaurant looked good for it with a smart style - modern exposed bricks with bright and warm colors.
Taco Fresco, with its imaginative flavors, was definitely a welcome addition to Downtown Rutland and we are glad we got to enjoy it.
